La Mona Rosa Brings Spirit of Central Mexico to Downtown Las Vegas
In the heart of Downtown Las Vegas, La Mona Rosa is impossible to miss. A towering 7-ft. neon-pink monkey clings to the exterior of the Mexico City-inspired restaurant and bar, welcoming guests into a vibrant space where regional Mexican cuisine, art, and storytelling converge.
Named after the Spanish phrase for “the pink monkey,” La Mona Rosa offers more than a striking visual identity. Inside, an open kitchen overlooks the dining room and cocktail bar, where Executive Chef Isidro Marquez-Castillo has created a menu rooted in the traditions of central Mexico. The restaurant’s interior blends rustic charm with modern touches, featuring wood accents, exposed brick, and striking copper beams. Vibrant details like a hanging disco monkey, stained-glass light fixtures, and colorful string lights add a playful energy to the space. Chef Marquez-Castillo’s culinary vision is shaped by both personal history and extensive travels throughout Mexico. The menu blends family recipes with refined interpretations of regional dishes, aiming to create a sense of familiarity for Mexican diners while broadening perceptions of Mexican cuisine for others. Guests can find tamales rojos inspired by Oaxaca, pozole from Jalisco, and an array of moles, tacos, and tostadas drawing influence from regions including Yucatán, Nayarit, and Puebla. Northern coastal Mexican flavors also appear throughout the menu in dishes such as Caesar salad and queso fundido.
Guests can start with house-fried tortilla chips and salsa, along with house-made guacamole prepared daily. Starters such as queso fundido, chicken quesadillas, chicken flautas, and yellowfin tuna ceviche showcase the restaurant’s balance of comforting classics and coastal influences. The taco selection serves as the centerpiece of the menu, highlighting regional flavors and Chef Marquez-Castillo’s creativity. Diners can choose from beef birria, carne asada, chicken tinga, mushroom and mole, and Baja-style tacos featuring beer-battered shrimp or red snapper. One standout is the poblano taco, considered Chef Marquez-Castillo’s signature dish. Heartier entrées continue the exploration of central Mexican cuisine with dishes such as beef enchiladas topped with rich mole sauce and chilaquiles verde, which deliver vibrant acidity and depth. Throughout the menu, handmade corn tortillas, crafted from nixtamal (whole dried corn) ground in-house daily, serve as the foundation for many of the dishes.
La Mona Rosa’s cocktail program highlights vibrant, fruit-forward flavors. Signature drinks include the MonaRita, crafted with blanco tequila, orange liqueur, agave, and fresh lime, as well as the Mezcal Hibiscus Margarita featuring Rosaluna mezcal, hibiscus, lime, orange, and agave for a smoky floral finish. The menu also includes a traditional carajillo made with Licor 43, coffee, and citrus peel, alongside the restaurant’s namesake Pink Monkey cocktail, a blend of mezcal, prickly pear, hibiscus, strawberry, and egg white. For guests looking for something spicy and refreshing, the Pepino Picoso combines reposado tequila, lime, orange liqueur, muddled cucumber, and jalapeño. Nonalcoholic offerings include house-made aguas frescas and Mexican-spiced coffee. Brunch is served Friday through Sunday, featuring a lineup of savory and sweet dishes inspired by traditional Mexican breakfast favorites. The menu includes prime steak and eggs, papas con chorizo, huevos rancheros, and mollete topped with beef barbacoa, alongside indulgent offerings such as tres leches pancakes and churro French toast. On Saturdays and Sundays, guests can also enjoy bottomless mimosas for $30 with a 90-minute all-you-can-drink limit. For an additional $5, diners can customize their mimosas with flavored options including strawberry, mango, guava, watermelon, and prickly pear.
The restaurant’s atmosphere is equally expressive. Brightly colored interiors feature custom works from celebrated Latina artist Mr. B Baby, whose art incorporates elements of her Puerto Rican and Mexican heritage. The installations include a large-scale street mural and paintings of her signature character, Chucho, a piñata figure symbolizing resilience and personal growth through the message, “from brokenness comes growth.” With bold flavors, deeply personal storytelling, and immersive design, La Mona Rosa is carving out a distinctive place in Las Vegas’ dining scene while celebrating the richness and regional diversity of Mexican cuisine.
